A musaku vam kao doma\u0107e jelo spravljaju od Hrvatske, Bosne, Srbije, Makedonije, Kosova, Bugarske, Albanije, Gr\u010dke, Turske sve do Mediterana, Libana, Jordana i Egipta na arapskom poluotoku.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Musaka od patlid\u017eana- gr\u010dka, turska, balkanska ili arapska?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Svi Zapadnjaci \u0107e vam re\u0107i da je za njih musaka jelo koje se priprema s patlid\u017eanima i mesom i da dolazi s Balkana, Mediterana i Bliskog istoka. No, upravo na Balkanu, naro\u010dito u na\u0161im krajevima, imate razli\u010dite varijacije na temu musake od patlid\u017eana, pa \u0107ete \u010desto u Bosni \u010duti i za musaku od krompira i mesa ili od tikvica i mesa.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Musaka je ipak arapsko jelo koje originalno potje\u010de s arapskog poluotoka, i prvi put se spominje u Bagdadu u srednjovjekovnoj arapskoj kuharici iz 13. vijeka <strong>\u201cA Baghdad Cookery Book\u201d<\/strong>. Ovo je jelo postalo tako popularno da ga i Osmanlije preuzimaju kao svoje i u 18. vijeku je opjevano u pjesmi otomanskog pjesnika \u0130brahima Tirsija. Ali se pod imenom musaka prvi put pojavljuje u knjizi&nbsp;Mehemta Kamila \u201cCooks\u2019 Refuge\u201d 1844, a 1862. je prevedeno u knjizi Turabi Efendija \u201cTurkish Cookery Book\u201d kao jelo koje zvani\u010dno od arapskog imena \u201cmuzakka\u201d dobiva englesko ime <strong><em>musaqqa<\/em><\/strong>. Turci su ga donijeli na balkansko podru\u010dje, a Grci su se \u017eeliv\u0161i se rje\u0161iti turskog utjecaja i u kuhinji osmislili varijaciju s be\u0161amel sosom i pronijeii taj recept kao svoju autohtonu recepturu za musaku. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Gr\u010dka musaka od patlid\u017eana<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">No, vratimo se izvornoj tradiciji i originalnim recepturama musake od patlid\u017eana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">U <strong>gr\u010dkoj verziji musaka<\/strong> se pravi od patlid\u017eana, pe\u010denih na maslinovom ulju i slo\u017eenih u tepsiju ili vatrostalnu zdjelu, prekrivene s kombinacijom mljevenog janje\u0107eg mesa, luka, sosa od paradajza i za\u010dinskog bilja. Sve to Grci preliju sa&nbsp;be\u0161amel sosom i ribanim sirom i zapeku u rerni. Ponekad u ovu kombinaciju dodaju i red tikvica.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/womeninadria.com\/wp-content\/uploads\/2026\/06\/Screenshot-2022-09-30-at-09.58.51.webp\" alt=\"\" class=\"wp-image-3316\" width=\"614\" height=\"616\"\/><figcaption class=\"wp-element-caption\">Gr\u010dka musaka<\/figcaption><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Turska musaka od patlid\u017eana<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Turska verzija musake<\/strong> se pravi druga\u010dije. U originaloj verziji koriste sjeckane patlid\u017eane na kockice, mljeveno june\u0107e ili gove\u0111e meso, luk i za\u010dine, i svje\u017e paradajz sjeckan na kockice, ali u njihovoj musaci nema be\u0161amel sosa. I to je glavna razlika izme\u0111u gr\u010dke i turske i arapske musake. Turci \u010desto prave musaku sa svojim ljutim papri\u010dicama tzv. ac\u0131 biber sal\u00e7as\u0131, pa njihov sos od paradajza zna biti spicy, a dodaju obavezno i slatku alepo papriku.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/womeninadria.com\/wp-content\/uploads\/2026\/06\/Screenshot-2022-09-29-at-21.52.12.webp\" alt=\"\" class=\"wp-image-3317\" width=\"603\" height=\"732\"\/><figcaption class=\"wp-element-caption\">Turska musaka<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Na Mediteranu i u zemljama Bliskog Istoka musaku <\/strong>prave sa patlid\u017eanima i paradajzom, ali umjesto mesa koriste leblebije i luk prelivene maslinovim ujem.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I do\u0111osmo do <strong>balkanskih varijanti musake<\/strong> koju smo navikli jesti u ovim krajevima. Dakle, te\u0161ko je re\u0107i koja musaka u na\u0161im krajevima preovladava, turska ili gr\u010dka, jer je i jedna i druga varijanta odoma\u0107ena. A sve vi\u0161e susre\u0107emo i vegetarijansku musaku, bez mesa, u koju su dodane tikvice i paprike uz patlid\u017eane, a ponekad i mrkva i celer.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Gr\u010dka musaka od patli\u017edana s be\u0161amel sosom:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2-3 patlid\u017eani<\/li>\n\n\n\n<li>1-2 crvena luka<\/li>\n\n\n\n<li>2 \u010dehna bijelog luka<\/li>\n\n\n\n<li>3-4 paradajza<\/li>\n\n\n\n<li>300 gr mljevene junetine<\/li>\n\n\n\n<li>1 mali sve\u017eanj per\u0161una<\/li>\n\n\n\n<li>so, biber <\/li>\n\n\n\n<li>maslinovo ulje<\/li>\n\n\n\n<li>1 sup. ka\u0161. paradajz sosa<\/li>\n\n\n\n<li>120 ml<strong> <\/strong>vode<\/li>\n\n\n\n<li>\u00bd ka\u0161. mljevenih klin\u010di\u0107a<\/li>\n\n\n\n<li>prstohvat origana<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bechamel umak<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd litra mlijeka<\/li>\n\n\n\n<li>\u00bd kockice maslaca<\/li>\n\n\n\n<li>100 g bra\u0161na<\/li>\n\n\n\n<li>1 jaje<\/li>\n\n\n\n<li>prstohvat mu\u0161katnog ora\u0161\u010di\u0107a<\/li>\n\n\n\n<li>so, biber<\/li>\n\n\n\n<li>30 g mljevenog tvrdog sira (ako nemamo gr\u010dki kefalotiri, mo\u017eemo ga zamijeniti drugim tvrdim sirom)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Priprema: <\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Zagrijte rernu na 180 C. Patlid\u017eane nare\u017eite na centimetre duge kri\u0161ke, posolite i stavite na stranu, a nakon otprilike pola sata, patlid\u017eane ocijedite i pr\u017eite ih u maslinovom ulju sa svake strane. Propr\u017eite nasjeckani luk i bijeli luk, dodajte mljeveno meso i vrlo malo vode. Na kraju dodajte soso od pradajza i za\u010dine i propr\u017eite 20tak minuta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Za to vrijeme pripremite umak od be\u0161amela. U tavi otopite maslac i dodajte bra\u0161no, promije\u0161ajte i dolijete mlijeko. Dodajte so,biber, mu\u0161katnim ora\u0161\u010di\u0107em i stavite na stranu. Kad se ohladi, dodajte jaje i stari sir i ponovo promije\u0161ajte. Zatim prelijte slo\u017eenu musaku sa sosom i zapecite u rerni 25-30 min na 180 C.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Turska musaka od patlid\u017eana<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Turska musaka ne sadr\u017ei umak od be\u0161amela, nego je namo\u010dena u umaku od jogurta s jajima i bra\u0161nom. Turska verzija ne sadr\u017ei sir te nije slojevita, a u nadjev se dodaje slatka i ljuta alepo paprika.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Priprema: <\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2-3 patlid\u017eani, sjeckani na kocke debljine oko 2-3 cm<\/li>\n\n\n\n<li>1-2 crvena luka<\/li>\n\n\n\n<li>2 \u010dehna bijelog luka<\/li>\n\n\n\n<li>400 gr mljevene junetine<\/li>\n\n\n\n<li>2-3 zelene biber paprike<\/li>\n\n\n\n<li>1 mali sve\u017eanj per\u0161una<\/li>\n\n\n\n<li>so, biber <\/li>\n\n\n\n<li>maslinovo ulje<\/li>\n\n\n\n<li>2 ka\u0161. paradajz sosa<\/li>\n\n\n\n<li>400 g svje\u017eeg, nasjeckanog paradajza <\/li>\n\n\n\n<li>2 vel.ka\u0161. Alepo paprike<\/li>\n\n\n\n<li>1 \u010d.k. turske chili papri\u010dice ili<\/li>\n\n\n\n<li>1 \u010d.k. turske biber chilli paste (ac\u0131 biber sal\u00e7as\u0131)<\/li>\n\n\n\n<li>100 ml<strong> <\/strong>vode<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Zagrijte rernu na 180 C. Patlid\u017eane nare\u017eite na kocke posolite i stavite na stranu, a nakon otprilike pola sata, patlid\u017eane ocijedite i dodajte propr\u017eenom nasjeckanom luku i bijelom luku, dodajte mljeveno meso i vrlo malo vode. Na kraju dodajte sos od pardajza, svje\u017ei paradajz i za\u010dine i propr\u017eite 15 tak minuta. Dodajte so,biber, ljutu i slatku papriku i chilli pastu.
